Dilly Cucumber Salad

Whenever I ask my husband to buy me a cucumber, he comes home with seven! Being the only one in the family who likes cucumbers, I am always in search of something to do with all of them! I found a recipe on the internet and adapted it based on what I actually had in the cabinet. The result was this lovely, refreshing salad that my son devoured while saying "kiwi". I didn't correct him because I am just happy someone else is eating cucumber. Now I am excited about the prospect of cucumbers growing in our garden because I have something else to do with them...and someone to eat them with!
Dilly Cucumber Salad
- 1 medium cucumber, peeled and sliced (I quartered mine)
- 1/4 cup rice vinegar
- 1 T dill (I can't wait to try this with Pampered Chef Dill Mix, my favorite spice of all time!)
- 1 tsp honey (I used raw honey)
- 1 tsp lime juice (I used key lime juice, but lemon juice would work as well)
- Salt and Pepper
In a bowl, whisk together vinegar, dill, honey, juice, and a pinch of salt and pepper. Add cucumbers to bowl and toss. Refrigerate for at least one hour.
