Coconut Crusted Tilapia
4 Fresh Tilapia Fillets 1 cup flaked coconut 2 Tbsp. Almond meal 1 Tbsp. seasoning (I used Cajun, but I'm sure other kinds would be good too, as long as it gives it a little "zing") 1/2 cup cornstarch dash salt 1 egg, beaten 1/2 cup oil (coconut, safflower, or canola would work best)

How to Get Rid of Clutter for Good
Not sure how to get rid of clutter and get organized? Neither was I. I am a reformed mess. I spent the first twenty-five years of my life buried under a pile of miscellaneous papers, library fines, parking tickets, missed appointments and lost forms. I regularly dug through clothes on my bedroom floor while getting dressed in the morning and often ended up eating a twelve dollar salad for dinner because there was once again nothing in my fridge.

Before my husband and I dated, we first bonded over our love of Mexican food. We spent many nights seeking out little hole-in-the-wall Mexican joints and chatting over burritos and guacamole. Now that we are married, we dedicate one night a week to Mexican fare. I recently discovered this yummy enchilada recipe. It’s easy and you can prep it ahead of time and throw it in the oven when you are ready for dinner. This recipe makes a lot, so it's perfect for a Cinco De Mayo party!
