Healthy Whole Grain Pancake Recipe

After a lot of searching, I found a healthy whole grain pancake recipe that tastes great.  I found the recipe on King Arthur's website.  It incorporates whole wheat flour & oats.  I also added ground flax seed & blueberries.  I don't know about you but I feel great when I find something that is healthy & the family loves it!

 

The other great thing about this recipe is that you can make the dry mix & store it for a while for later use.  When you want to make pancakes, you just have to add 1 cup of the mix, 1 cup of buttermilk, and 1 egg.... that's easy enough!  It's probably best to add the ground flax seed at this point too (rather than in the whole batch) since it's best when freshly ground. 

 

I haven't tried white whole wheat flour yet but apparently it has a less bitter taste than regular whole wheat flour & is just as healthy.  I'm excited to try it out in this recipe.
