Bongo Bongo Dip

There is a restaurant near my alma mater, named BJ's. They make a spinach dip served with toasted garlic bread called Bongo Bongo dip and it is heavenly enough to skip eating all day just so you have room for this little taste of dreaminess. I decided to resurrect this copycat recipe over the weekend with some old college friends as we reminisced about good times spent laughing over a fabulous appetizer.
Bongo Bongo Dip (Just Like BJ's)
- 1 pkg frozen chopped spinach, thawed and drained
- 8 oz cream cheese, softened
- 1 can water chestnuts, drained and chopped
- 16 oz sour cream
- 1 package ranch salad dressing mix
- 8 oz shredded colby jack, reserve an ounce
Preheat oven to 350 degrees.
Beat sour cream and cream cheese together. Add all other ingredients except reserved cheese. Hand stir with spatula or spoon (do not use mixer or spinach will turn dip green). Spread dip into baking dish and sprinkle cheese on top.
Bake 30 minutes or until bubbly.
Serve hot with toasted bread or toasted garlic bread slices.
